This is one of my favorite go-to meals! It's packed with nutrients and inexpensive. I'll often pre-mix the dry ingredients for road trips to make sure I always have a nutritious just-add-water option available. This can also be made a day ahead of time and kept in the refrigerator. Chia pudding has a unique texture - try it and see what you think!
Ingredients
1/4 cup dry organic chia seeds
3/4 tsp cocoa powder
1/4 tsp stevia (or more according to your taste)
1 1/2 cups water
2 Tbsp peanut butter (or nut butter of choice)
optional: mix in sliced banana
Instructions
- Mix dry ingredients together in a single-serving bowl.
- Add nut butter and water and immediately stir mixture thoroughly. (Water can be hot, cold, or room temperature depending on your preference.)
- Allow mixture to settle for 5-10 minutes until texture is thick and pudding-like.
- Add preferred toppings if desired.
