Chocolate Peanut Butter Chia Pudding

This is one of my favorite go-to meals! It's packed with nutrients and inexpensive. I'll often pre-mix the dry ingredients for road trips to make sure I always have a nutritious just-add-water option available. This can also be made a day ahead of time and kept in the refrigerator. Chia pudding has a unique texture - try it and see what you think!

Ingredients

1/4 cup dry organic chia seeds

3/4 tsp cocoa powder

1/4 tsp stevia (or more according to your taste)

1 1/2 cups water

2 Tbsp peanut butter (or nut butter of choice)

optional: mix in sliced banana

Instructions

  1. Mix dry ingredients together in a single-serving bowl.
  2. Add nut butter and water and immediately stir mixture thoroughly. (Water can be hot, cold, or room temperature depending on your preference.)
  3. Allow mixture to settle for 5-10 minutes until texture is thick and pudding-like.
  4. Add preferred toppings if desired.
