These cookies taste like childhood to me. I've adapted my mom's go-to recipe for these no-bake cookies with more nutritious ingredients. And when I have a chocolate craving, this is a favorite recipe I turn to. They'll harden if you let them cool, but I can rarely wait long enough - so I enjoy them in all their gooey delicious-ness.
Ingredients
1 cup monk-fruit/erythritol blend
1/2 cup milk (alternative milks also work well)
1/2 cup coconut oil
1/3 cup cocoa powder
2 1/2 cups rolled oats
Instructions
- In a saucepan, whisk monk-fruit, milk, coconut oil, and cocoa powder over medium heat.
- Bring to a boil for 1-2 minutes while consistently whisking.
- Turn heat off and add oats. Stir thoroughly.
- Drop mixture in spoonfuls on wax paper.
- Allow to cool.
