Fruit Cobbler

We don’t do desserts often, but when we do, we love making sugar-free, nutritious options like this. Its versatile nature allows you to use whatever fruit you prefer or have available. This is a warm dish, perfect to serve alongside a cozy cup of tea. (Bonus: It acts as a breakfast treat for the next morning!)

Ingredients

3 cups of preferred fruit, either alone or mixed (blueberries, cherries, pineapple, peaches, apples, etc.)

¾ cup dry oats

¾ cup walnut pieces (or slivered almonds)

½ cup honey

1 tsp cinnamon

optional: ½ cup unsweetened coconut

Instructions

  1. Preheat oven to 350 degrees F.
  2. Place thawed or fresh fruit, chopped if larger fruits, in a glass, 9x9 inch baking dish with ½ cup water in the bottom.
  3. In a separate bowl, combine oats, walnuts, honey, cinnamon, and coconut. Pour over fruit.
  4. Bake for 10-15 minutes or until slightly browned on top.
